The only fully stealth plane in 2000 was the F-117. And first-gen stealth is certainly not invincible, the Serbs proved that when they shot down a Nighthawk with a '60s era Spoon Rest radar.

Also I found out that the US Navy ran war games in 2002 where the simulated Iranian opponent was able to sink 15 ships, including a carrier.

I heard about that.
America also disabled communications in said game so they used messengers.
The american opponent got beat so bad the military didn't let the General simulating Iran do any of his tactics

Yeah. The Red Team used messengers on motorbikes and had coded orders disguised as prayers delivered at the mosques.

The navy had to "refloat" all of its ships after just two days, and then they basically scripted everything so that the Red Team leader had to shut off his air defenses, move his troops away from the shores, ect. just so they could land Marines successfully.

In a surprise move, Iranian leaderships has mobilized the entirety of the military, including both active and reserve forces. The stated reason for this is a new force-wide training program that will involve extensive war games. Eight infantry divisions and two armoured divisions (about 100,000 men) are deployed to near the southern border with Iraq, concentrated in Abadan, Khorramshahr, Qofas, and Hoveyzeh. 30,000 additional men are spread out across the mountainous portions of the border.

Quietly, about 600 artillery pieces and SPGs, 85 MRLs, and 10 Shahab-2 missile launchers are put into concealed positions along the southern border, stretching from Bostan to the Gulf. For air defense along areas with high troop concentrations, the border is protected by 100 static S-75 and S-200 SAMs, 50 mobile MIM-23 Hawk launchers, and a handful(10-20) of 2K12 Kub and Rapier missiles. These SAMs are supplemented by about 400 AA guns. The Navy begins concentrating forces near Bandar Bushehr.
