I've only seen a handful of animes, so my sample size is rather limited. However, I do tend to agree with you.

Nujabes was a really amazing discovery for me. I frequently listen to instrumental "Homework Edits" of his tracks on youtube when I require some good music without lyrics. But the original tracks are pretty good, too:

I don't believe it's from an anime, but the videos seems influenced by it (at least to my untrained eyes). It's not the style of music I normally listen to, but I was very impressed. I also don't know anything about the artist, but there's a decent amount available out there. I would highly recommend checking out some of their other stuff, too, as the styles and sound of the music varies a good amount from track to track, though there's a definite through-line there. Also, the videos are extremely creative and well-made.
